Yesterday as part of lunch, I made a potato casserole. The kids loved it...
Large bag frozen hashbrowns
1 can cream of chicken soup
1 pint (16 oz) sour cream
1 med onion (finely chopped)
2 cups sharp cheese (shredded)
3 tbsp butter/margarine (melted)
Mix all ingredients together and pour into a 13x9x2 ungreased pan. Top with more cheese. Bake at 375 for 40 minutes.
I forgot to chop the onions and put them in. The kids LOVED it.

I have had that before! Yummy! Did you eat it as the entree? I could do that myself - but the kids and Mike would probably want MEAT. LOL.
